... because sometime (often) I need a slice of this wonderful 'refrigerator cake' (horrible name).
100gr melted butter, unsalted
125gr sugar
2 large eggs
50gr cocoa powder (unsweetened)
100gr broken rich tea or digestive biscuits
whisk together by hand the sugar and the eggs
add the cocoa (I will sift it before mixing it, breath easy!)
I use this stuff. It's the good stuff.
Now add the biscuits... try not to eat too many of them... I know broken biscuits have no calories, but still...
I know... this doesn't look good at this stage... just trust me, it will be delish. Just 'plop' (couldn't resist, I apologise) the mixture on a sheet of foil and wrap it up.
Then it's in the freezer for a couple of hours or until hard.
Then you eat it.
I'm serving it tonight when the mother in law comes to dinner.
With an hypocritical fruit salad. Of course.

I make something similar, just love it. We call it chocolate biscuit cake. You've reminded me, I haven't made any for ages, I shall whip one up later I think. CJ xx
