It might be the cold weather lingering on, but I really feel like baking these days and the 'clementine cake' fiasco (actually it was much appreciated in Mr M's office) hasn't dampen my enthusiasm...
I wasn't going to take any risks this time: chocolate cupcakes. A favourite in this household... BUT throwing caution to the wind I decided to try a new recipe: instead of the super quick and easy - throw it all in the mixed - Nigella's way, I cracked opened my new copy of Cupcakes From the Primrose Bakery.
The resulting cupcakes were totally delicious. Seriously spongy but not dry, soft and melting in your mouth...
ah... the heartwarming sight of melted chocolate...
The process is somewhat longwinded 4 different bowls??? and lots of mixer blades washing etc., but all is forgiven at the first bite, trust me.
I then went and spoiled it all when I attempted the icing; I only had enough sugar to make half the amount... no problem there, the boys are not super keen on the stuff anyway, so I went ahead halfing all the ingredients... except the milk.
Big mistake.
The icing 'oozed' out of the piping bag. Oozed, dripped, squirted...
Not a pretty sight.
Eventually I found the right 'gravity pull vs oozing' balance and I was even able to sprinkle the compulsory sprinkles on top.
Phew.
Don't judge the cupcakes by the icing, that's my new motto.
Oh, and do your math correctly.
